VINIFICATION
From the many climates that exist within the vineyard and from the varieties that ripen early, such as Mavrotragano and Monemvasia.
Very ripe grapes are selected and laid out in the sun for several days to dry.
The warm sun and Aegean breeze naturally dehydrate the grapes, concentrating flavors.
Fermentation is slow and lasts a long time, stopping naturally with the arrival of winter cold,
leaving a high level of natural residual sugars. The wine is aged in oak barrels for 1–2 years.
